5 pork chops (boneless)
5 small red or Idaho potatoes (sliced and diced)
1 small onion (diced)
5 tbsp olive oil
1 packet of ranch dressing mix
Salt
Pepper
Parsley flakes
Shredded cheese
3 tbsp diced pimento
*preheat oven to 400 degrees*
1. Mix the olive oil and ranch dressing mix in a bowl and dredge the pork chops thru the mixture. Place in a casserole dish.
2. Place cut up potatoes on top of pork chops.
3. Next place cut up onion on top of everything else.
4. Place diced pimento on top of everything.
5. Add salt, pepper and parsley to taste.
Bake for 45 minutes with foil on top
Add 1 cup shredded cheese
Bake for 15 more minutes
