First things first: I love Brie and I love balsamic vinegar. Put the two together, and I’m in heaven!!! This is a great appetizer! And I would eat this entire thing myself if my jeans wouldn’t tell on me afterwards 🙂
I am using my new Dip & Brie Baker that I purchased from Linen World. You can also purchase one yourself. It cooks the brie perfectly. Plus if you’re like me and have no clue where the cast iron skillets are, this Dip & Brie Baker makes life easier.

Now onto the recipe! You will need:
Brie cheese
Preserved cherries
Balsamic vinegar
Preheat oven to 400 degrees
Mix together the preserved cherries and 1/3 cup balsamic vinegar. The vinegar can be adjusted according to your taste, so please, taste test.
Cut the top off the brie rind so you can add the cherry balsamic mixture.
Place in the oven for 10 minutes uncovered.
When you take it out, it should look like this:
Smear some of that goodness onto a cracker of your choosing. I used pretzel crackers.
